  Mongolian Beef 
  1 lb boneless beef (flank is good) 
  3 T oil 
  2 cloves garlic, mashed 
  4 green onions, cut in 2" lengths and slivered. 
  Marinade: 
  2 t sugar 
  2 t soy sauce 
  dash of white pepper 
  2 T sherry 
  Sauce: 
  2 t Hoisin Sauce 
  1/2 t catsup 
  2 T chicken broth or water 
  Freeze beef one hour before slicing. Slice meat across the grain in very thin slices. Mix the
  marinade ingredients. Add sliced beef & marinate 1/2 hour. Heat wok, add oil & garlic. Stir
  fry 1 minute & discard the garlic. Add beef & green onions. Stir fry 3 minutes. Add Hoisin
  sauce, catsup & chicken broth. Stir fry 1 more minute. Serve over rice. Serves 4.
