Sweet and Sour Short Ribs
2 1/2 to 3 lbs short Ribs, cut into single serving-sized pieces and trimmed of excess fat
Flour
Salt, pepper
Oil or shortening for browning
1 cup diced onion
1 clove garlic, minced
1 1/2 cups hot water
1 bay leaf
3 Tablespoons brown sugar
1/3 cup ketchup
1/4 cup vinegar
Instant flour
Sprinkle ribs with salt and pepper and roll in flour.
Brown well on all sides in hot fat.
Remove to a Dutch oven or other heavy utensil.
Add onions and garlic to fat in pan and cook until lightly browned; add to short ribs.
Combine remaining ingredients with 1/2 teaspoon salt and pour over ribs.
Cover and cook over low heat 2 1/2 to 3 hours.
Remove to serving dish and cover.
Skim fat from gravy.
Stir in enough instant flour to thicken to your taste.
Gravy may need to be diluted with water.
