1 pound soba noodles
1 1/2 teaspoons crushed red pepper
2 1/2 tablespoons minced fresh ginger
2 tablespoons minced garlic
1 large red onion, halved vertically -- thinly sliced
3 medium zucchini -- cut in 1-1/2" strips
3 medium yellow squash -- cut in 1-1/2" strips
1/2 cup soy sauce
3 1/2 tablespoons Chinese rice wine or sake
2 1/2 tablespoons sugar
3 tablespoons Chinese black vinegar or Worcestershire
1 1/2 tablespoons safflower or corn oil
2 1/2 tablespoons dark sesame oil
1/4 cup minced fresh paesley

Cook noodles in boiling water until just tender; rinse under warm water and drain.

Heat wok or heavy skillet over high heat. Add safflower and sesame oil and heat about 30 sec. Add red pepper mixture and stir-fry until fragrant, about 15 sec. Add onion; stir-fry until slightly limp, about 1 min.

Add squashes and stir-fry until barely tender, about 1-1/2 min. Add soy dressing and noodles and toss lightly to coat. Add parsley and toss lightly. Transfer to a serving platter.
