Almond Cookies 
(from Mary Sia's Chinese Cookibook) 
3 cups flour 
1 teaspoon soda 
1/2 teaspoon salt 
1 large egg 
1 teaspoon almond extract 
1 cup sugar 
1 1/3 cups shortening 
Blanched almonds or red food coloring 
Preheat oven to 350° F.
Sift flour, soda and salt together. Beat egg with a fork until lemon colored. Add almond extract. 
Cream sugar and shortening well, add egg and mix thoroughly. Add dry ingredients gradually. 
Roll into balls about 1 inch in diameter and place an inch apart on greased cookie sheet. Press thumb gently in center of top of each ball. Fill depression with half a blanched almond or touch it with the end of a chopstick dipped in red food coloring. 
Bake 350 degrees for about 20 minutes until browned. Makes about 54 cookies.
