Green Tea Sponge Cake

1 Tbsp. green tea powder (available at Asian markets)
1 Tbsp. plus 1 tsp. hot water
3 eggs
1/3 granulated sugar
1/2 cup all-purpose flour
3 Tbsp. plus 1 tsp. almond flour (available at Asian markets or specialty foods shops), or substitute
very finely ground almonds or all-purpose flour
1 Tbsp. butter
1 Tbsp. milk
2 drops pure vanilla extract


Preheat oven to 350°.

Dissolve tea in hot water. Cream together eggs and sugar. Add tea and combine.

Sift together flours and fold into egg mixture. Melt butter with milk. Add butter, milk and vanilla to egg mixture and combine.

Butter an 8" springform pan and pour in batter. Bake cake in preheated oven 15 minutes. Let cool before removing side of pan.
