  Dry Sauteed String Beans
Source: Peking Duck House 
  Ingredients: 
  5 oz. string beans 
  1 oz. chopped pickled Chinese radish and preserved vegetables 
  1 teaspoon chopped garlic 
  1 teaspoon chopped ginger 
  1 teaspoon chopped scallions 
  2 tablespoons soybean oil 
  Seasonings 
  1 tablespoon soy sauce 
  1/4 teaspoon salt 
  1/4 teaspoon sugar 
  1 tablespoon white wine 
  1/4 tablespoon white vinegar 
  Preparation 
  1. Remove fibers from string beans. Wash and drain. 
  2. Heat oil in frying pan. Fry string beans with garlic, ginger also 
season with salt and sugar. Cover and stir-fry alternately until beans 
are wrinkled. 
  3. Add pickled radish and preserved vegetables, scallions then stir-fry
 with soy sauce, wine and vinegar. Serve. 
  Makes one serving.
