Egg Roll Fillings:

1 lb. extra lean hamburger meat
1 onion, chopped
1 bunch green onion, chopped
3 c. bean sprouts
1 c. bamboo shoots, chopped
1 c. button mushrooms, chopped
3 T. soy sauce
1 t. salt

Brown hamburger and add all ingredients leaving bean sprouts last.

Do not over cook vegetables they must be crisp. Drain in colander.

When cool spread about 1 heaping T of filling in middle of wrapper. Fold sides and roll. Moisten sides with water ( this will help seal)

Heat oil for deep frying and fry until light brown.

Drain with newspaper and paper towel on top.

Egg Rolls

1 package egg roll wrappers
1 cup chopped fresh mushrooms
1 cup frozen peas w/ carrots ( cube cut) { Drain }
1 cup garbanzo beans ( canned, cooked) { Drain}
1 cup pinto beans ( canned, cooked) { Drain}
1/2 cup potato buds ( boxed mashed potatoes)

Mix all above season w/ seasoning
Salt / Pepper as per your taste

After all is mixed evenly and well spoon on the egg roll wrapper. Follow instructions as demonstrated on the label or package.

Secure the end of wrapper with slightly beaten egg yolk.

It is better to freeze raw egg rolls before deep frying.

Wrap each roll individually w/ wax paper. Fry till medium brown!
