Satay Marinade ala Chefshell

1/2 cup soy sauce 
1/2 cup Mirin, dry sherry or white wine 
1 tbsp. hoisin sauce 
1 to 2 tbsp. sambal or other chili sauce 
few drops hot chili oil 
Juice of 1 lime and 1 lemon 
1 tbsp. rice wine vinegar 
2 tsp. brown sugar 
few drops toasted sesame oil 
1 tsp. oyster sauce (optional) 
1 tbsp. finely minced ginger 
2 tsp. fresh minced garlic 
Just combine all ingredients in a plastic bag or deep bowl and marinate 
beef 4 to 6 hours or overnight. 
Chicken, marinate 2 to 4 hours.
Pork, marinate 4 to 6 hours or overnight.
