Noodles in Peanut Sauce 
Recipe By : Secrets of Fat Free Chinese Cooking/Ying Chang Compestine

8 ounces wheat noodles -- or thin spaghetti 
1/2 cup Rice Dream -- or low fat soymilk 
1 1/2 tablespoons peanut butter 
2 teaspoons low-sodium soy sauce 
2 teaspoons cornstarch 
1 teaspoon rice vinegar 
1 teaspoon minced fresh ginger 
1 teaspoon minced fresh garlic 
Cook the noodles according to package directions or until just tender. 
Drain the noodles in a colander and rinse with cold water. Set aside. 
Place all of the sauce ingredients in a blender and process until smooth. 
Transfer the noodles to a large bowl. Add the sauce, mix thoroughly, 
and serve. 
Yield: 6 servings. 2.7 grams of fat per serving, 7.2 grams of protein.
