Lanna Sausages (Sai Oua): 
1 pound ground pork 
1/4 cup cilantro leaves, chopped 
2 Tablespoons garlic, minced 
Salt/pepper 
1 teaspoon lime zest, grated 
1 Tablespoon minced lemon grass 
1 teaspoon Galangal powder 
1 Shallot, minced 
1 Tablespoon Fish sauce 
1 teaspoon shrimp paste 
1 teaspoon chili pepper, or to taste 
Sausage casing 
Mix all ingredients except sausage casings completely. Stuff casings and fry or broil. These have a wonderful taste.
