Chinese Chicken Salad

Amount Measure Ingredient -- Preparation Method

4 boned and skinned chicken breast halves -- cooked & Chopped
8 ounces waterchestnuts -- drained & sliced
3 green onions & tops -- chopped
1/4 cup sesame seeds -- toasted
1/3 cup sliced almonds -- toasted
1 tablespoon poppy seeds
3 ounces chow mein noodles
1 head iceberg lettuce broked into small pieces
4 tablespoons sugar
4 tablespoons cider vinegar
salt and pepper
1/2 cup vegetable oil

In a large bowl, mix together chicken, water chestnuts, green onions, sesame seeds and almonds.

Pour dressing over chicken mixture and toss gently to mix.

Refrigerate until chilled, about 2 hours.

At serving time, mix chicken mixture with noodles and lettuce.

Dressing: Mix together in a pint jar:
4 tablespoons sugar
4 tablespoons cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon poppy seeds
1/2 cup vegetable oil
