SPICY SZECHWAN CHICKEN 
2 tablespoons oil 
1 clove garlic, chopped 
4 slices fresh ginger root, slivered 
3/4 pound chicken breasts, skinned and cubed 
2 tablespoons chicken stock 
1 tablespoon chili sauce or hot bean paste 
2 green onions, chopped 
1 tablespoon rice wine 
3/4 teaspoon sesame oil 
1 tablespoon soy sauce 
3/4 teaspoon sugar 
1/3 teaspoon Szechwan pepper (optional) 
1/2 teaspoon cornstarch (to thicken) 
2 cups broccoli florets, blanched (to garnish) 
Heat oil, garlic, and ginger in wok over high heat. Stir in chicken. 
Cook for 2 to 2-1/2 minutes. 
Add other ingredients (except broccoli and cornstarch). Stir for 1 to 2
 minutes more, mixing well. Thicken with cornstarch.
Place in center of serving dish, surrounded by broccoli.
