Sweet and Sour Pork

Sweet & Sour Pork

1 lb. pork
1 green pepper, chopped large
4 slices pineapple

Marinade:
1/2 tsp salt
1/2 tsp soy sauce
1 Tblsp cornstarch
1 tsp wine (sherry, mirin, sake or ...)
1 egg
5 cups oil for frying

Sweet & Sour Sauce:
1 tsp salt
3 Tblsp vinegar
4 Tblsp catsup
5 Tblsp pineapple juice (from can you got the slices out of)
1 tsp sesame oil
3 tsp cornstarch
4 Tblsp sugar
1/2 cup cornstarch for batter (or 3 parts cornstarch, 1 part flour, bit of garlic salt)
cherries or red pepper for color
ginger

Cut pork into 1 inch squares. Marinate for at least 1/2 hour.

Cut green pepper into 1" squares. Cut pineapple slices into pieces about the same side. Set aside.

Heat oil. While oil is heating coat each piece of pork in cornstarch. When oil is ready fry pork for about 2 minutes,take out and let cool, then fry once more until crispy.

Remove all oil but 2 Tblsp into wok. In cup, mix salt, vinegar, catsup, pineapple juice, sesame oil.

Put into wok, add reserved pineapple and bring oil, sauce mix and pineapple to boiling point.

Add green pepper. Thicken sauce with cornstarch, add sugar to taste. (Sour first, then sweet) Turn off heat. Add pork and mix well and serve.

To thicken with cornstarch, save a bit of sauce mix and put blend cornstarch into this.

Add most to hot sauce mix in wok. If it is not thick enough, add rest, but this way if it will not suddenly turn into a solid block.
