Vegetable: Braised Bok Choy

Braised Bok Choy

1 large head bok choy
2 tbsp. peanut oil
1 tsp. sesame oil
1 large clove garlic, minced
1/4 tsp. ground ginger
1/2 cup chicken stock
1 tbsp. oyster sauce
2 tsp. soy sauce
1/2 tsp. salt
2 tsp. cornstarch
1 tbsp. cold water


Chop coarsely the head of bok choy and set aside. Mince finely the clove of garlic.

In a wok or large cast iron pan heat the peanut and sesame oils on medium heat. Add the ground ginger and minced garlic and cook stirring for 2 minutes. Add the chicken stock, oyster sauce, soy sauce, salt and bok choy. Stir to combine. Cover and simmer for 4 minutes.

Meanwhile, mix the cornstarch with the cold water. Push the bok choy aside in the pan and pour in the water and flour mixture. Stir until thick and then mix with the bok choy. Serve on rice or as a side dish.
