Barbequed Baby Octopus

Barbecued Baby Octopus
Grated rind and juice one lemon
1/2 cup extra virgin olive oil
8 tsp. chopped basil
3 cloves finely chopped garlic
60 ml (2 fl oz) dry white wine
Dried chili (to taste)
1 kg (2lb) baby octopus, cleaned; with heads and beaks removed
Combine lemon rind and juice, olive oil, basil, garlic, wine and dried
chili to taste in a small jar. Shake well.
Pour over cleaned and prepared octopus (in a shallow dish).
Stir to coat well. Cover and refrigerate for minimum 6 hrs. or overnight.
Drain and barbecue / char-grill over high 2-3 mins. or until cooked.
