Steak and Kidney Pie (12 smaller ones)
1 tblsp vegatble oil
3 lb chuck steak,cubed.
1/2 lb lambs' kidneys,chopped.(use extra, as 'Drew the Tasmaniac' suggests)
2 large onions,chopped.
1/4 cup all purp. flour.
2 tsp mixed herbs.
1/2 lb mushrooms,sliced.
1/2 cop beef stock.
1 lge. tomato,chopped.
salt & pepper to taste.
3 sheets ready-rolled shortcrust pastry.
3 sheets -"- -"- butter-puff pastry.
1 egg, lightly beaten.
Heat oil in large pan, add steak, kidney and onion, stir over high heat
until meat has browned. Sprinkle with flour and mixed herbs,stir to combine.
Add mushrooms, stock, tomatoes, salt and pepper to taste. Bring to near simmering,
reduce heat,then simmer gently for 1 hr.30 min. or until meat is tender
and the sauce has thickened. Allow to cool completely.
Preheat oven to 410F. Lightly grease twelve 4" pie tins with butter or oil.
Cut shortcrust pastry into 5" rounds.
Place into the bottom of the pie tins. Fill each tin with the meat
mixture.
Cut 4" rounds from the Puff Pastry,place on top of filling. Brush with
beaten egg,bake in preheated oven for
25-30 min or until golden.
