Crockpot Baked Beans

2 pounds kidney beans
1/2 cup sugar
2/3 cup molasses
6 teaspoons dry mustard
2 teaspoons salt
1/4 teaspoon pepper
1 meduim onion, chopped
salt pork
4 1/2 cups boiling water


Rinse dry beans in cold water. Place in a large bowl and cover with 2" of cold water. Let soak overnight in refrigerator. Drain and rinse beans.

Place in a large crockpot with remaining ingredients. Cook on high 12 - 14 hours or low 24 hours or until beans are soft and juice is thick. Stir occasionally. Check to make sure there is enough water after 6 hours, not to boil dry. Pea beans can be used instead of kidney beans. If using a regular size crockpot half the recipe and the cooking time is longer.
