BAKED LIMA BEANS
1 lb. dried limas (baby) - goya is good brand
1 teas. salt
1/4 lb. sliced bacon
1-1/2 teas. dry mustard
1 teas. ginger
3/4 cup honey
1 medium onion, peeled and stuck with three whole cloves
1 medium onion, sliced
Preheat oven to 375.
Soak beans overnight in water.
Cook in same water till tender and skins burst. Drain; reserve liquid.
In a 2-1/2 qt. casserole, place 1/2 the bacon, all beans and rest of
ingredients. Cover with liquid (even).
Put on other 1/2 bacon. Bake covered 1-1/2 hours. Remove cover last
1/2 hour. Add more liquid if necessary.
