Baked Beans by Sissy
1 lb. great northern beans
1 large onion, chopped
16 oz catsup
1/2 cup blackstrap molassas
1/4 lb. bacon
Preheat oven to 300.
Pick over beans and remove any foreign matter.
Rinse, then cover with water and allow to soak, covered, overnight.
Drain beans, then cover with fresh water and bring to a boil.
Simmer for about 2 hours, until tender.
Drain beans, reserving liquid and transfer beans to a baking pot.
Stir in onion, catsup and molassas and about 1/2 cup of bean cooking
liquid.
Bake, covered, for about five hours, adding additional bean cooking
liquid as necessary.
Lay bacon strips over top of beans during last hour of baking.
