Baked Beans by Joanne

1 lb. dried beans
1 onion, sliced
1/4 lb salt pork, cut in chunks or 6 slices bacon, cooked and crumbled
1 cup water
1/2 c molasses
1/3 c brown sugar
1 tsp dry mustard
1/4 tsp pepper

Preheat oven to 275 (if using conventional oven and not using crockpot). Soak the beans overnight in enough water to cover them. Drain.

Then in a large pot add about 8 cups of cold water and bring them to a boil and reduce heat and simmer for about 10 minutes. Drain and reserve water.

In crockpot combine the drained beans, onion and salt pork ( or bacon if using).

Add 1 cup water, molasses, brown sugar, dry mustard and pepper. Stir to combine.

Cover and cook on low for 10-12 hours or high for 5-6. Stir before serving.

IF using a ceramic bean pot or casserole make sure the beans are covered with liquid before placing them in the oven.

Bake for 8 hours. Keep an eye on them so they don' get too dry and add water as necessary.

Use reserved water that beans were cooked in. Bake covered and check them often.
