Bean: White Bean Salad

White Bean Salad
from True Grits... Tall Tales and Recipes from the New South

2 cups cooked white beans
1/2 cup chopped onion
3 tablespoons chopped fresh Italian parsley
1/4 cup chopped yellow bell pepper
1/4 cup chopped red bell pepper
1/2 teaspoon white pepper
1/8 teaspoon salt
2 tablespoons balsamic vinegar
1 tablespoon white wine vinegar
2 tablespoons olive oil
1 head romaine, separated into leaves


Combine the white beans, onion, parsley, yellow pepper, red pepper, white pepper, salt, balsamic vinegar and olive oil in a bowl; mix well.

Chill, covered, for 30 minutes to 3 hours; drain.

Spoon onto a romaine-lined serving platter.

Serves 6
