Can’t Believe They Came Out of a Can Black-Eyed Peas

4 (15-16 oz.) cans black-eyed peas, undrained
5 stalks celery, chopped
1/2 cup green onion, chopped, white and green parts
4 to 5 cloves garlic, chopped
4 small to medium smoked ham hocks
2 tsp. White pepper
2 tsp. Black pepper
2 tblsp. Butter
3 dashes Lawry’s Season All, any variety
2 tblsp Maggi seasoning (can substitute vegetable or chicken broth)

Boil ham hocks for 2 hours, making sure they remain covered with water.

While they cook, sauté onion, celery, and garlic in butter with all the seasonings until it smells too good to wait much longer. Add all the black-eyed peas and simmer on low, stirring often, for about 45 minutes. Add ham hocks and about 1/2 of the water they boiled in. Allow to cook on medium low until ham hock meat is falling off the bone. Serve with fresh cornbread and top with more green onion and chopped hot pepper.

Vegetarian and pork-free suggestions: 2 tblp. Maggi seasoning
1 extra cup celery and onion
3 smoked turkey wing drums, boiled for 1 hour then cooked with peas until falling off bone
