Pork Chops with Black Beans and Sweet Potato

12 x 18 sheets of aluminum foil per serving
1 can (15 oz) black beans, rinsed and drained
4 bone-in pork loin chops- 1/2 “ thick
1 can (15oz) sweet potatoes in syrup, drained
1/3 cup thawed orange juice concentrate
1 1/2 tsp ground cumin
1 tsp garlic salt
1 tsp ( Tabasco or such)


Preheat oven to 450.

Center one-fourth of black beans on each sheet of foil. Top with pork chops. Arrange sweet potatoes around chops. Combine orange juice concentrate, cumin, garlic salt, and hot sauce and then spoon equal portions over top of each pork chop. Bring up foil sides. Double fold top and ends to seal like an envelop, leaving room for heat circulation inside. Repeat to make other packets. Bake 15-18 Minutes on a cookie sheet in oven.
