COUSCOUS WITH PARSLEY
1 T olive oil
1 T butter
1/2 c. finely chopped onion
1 1/3 c. water or broth-(better with broth)
1/4 t Tabasco sauce
Salt and freshly gournd pepper to taste
1 c couscous
2 T lemon juice-(better if using freshly squeezed)
4 T chopped fresh parsley
Heat olive oil and butter in a saucepan over medium heat.
Add onion and cook, stirring until wilted.
Add water or broth, Tabasco, salt and pepper and bring to a boil.
Add couscous, stir and cover. Remove from heat and let stand five minutes.
Stir in lemon juice and parsley and serve.
Makes four servings
