Lentils Spicy Red Lentils

Spicy Red Lentils
From Jill Dupliex, New Food.

1 cup split red lentils
4 cups water
1/2 tsp. turmeric
1/2 tsp. salt
2 tbs. vegetable or light olive oil
1/2 tsp. whole cumin seeds
1 clove garlic, peeled and smashed
1 small onion, peeled and sliced
1/2 tsp. coriander seeds
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper


Wash lentils in three changes of water and discard any dark ones. Cook drained lentils in water with salt and turmeric for 30 minutes until soft but not mushy. Drain and reserve water.

Heat oil in heavy bottomed fry pan. When hot add cumin seeds and fry for one minute. Add garlic, onion and fry until golden brown. Add coriander, ground cumin, cayenne and lentils, discard garlic and cook over low heat for 5 minutes, adding more lentil water if lentils dry out. Serves 4.
