Lima: Baked Lima Beans

Baked Lima Beans

1 lb. dried baby limas
1 teas. salt
1/4 lb. sliced bacon
1-1/2 teas. dry mustard
1 teas. ground ginger
3/4 honey
1 medium onion-peeled and stuck with three whole cloves
1 medium onion, sliced


Soak beans overnight in water. Cook in same water till tender and skins burst. Drain, reserve liquid.

In a 2-1/2 quart casserole, place 1/2 the bacon, all the beans and the rest of ingredients. Cover with liquid so that liquid is even with beans. Put on other 1/2 bacon.

Bake covered 1-1/2 hours. Remove cover last 1/2 hour. Add more liquid if necessary.
