Black Eyed Peas
6 cups fresh or frozen black-eyed peas
3 (14 oz) cans low fat chicken broth
2 teaspoons creole seasoning
1 teaspoon olive oil
1/2 to 1 teaspoon hot sauce (more or less depending on brand and personal taste)
Combine all ingredients and simmer 45 minutes in covered dutch oven.
