Split Pea Soup
2 cups (1 lb.) dry split peas
2 qts. water
1 ham bone
1 cup celery, minced
1/2 cup onion, finely chopped
1/2 cup carrot, minced (optional)
1 sprig parsley
1/4 tsp. pepper
Heat peas and water to boiling; boil gently for 2 minutes. Remove from heat; cover and let stand 1 hour.
Add remaining ingredients to peas. Heat to boiling. Reduce heat and simmer, covered, 2 1/2 to 3 hours until peas are very soft.
Remove bone; trim meat and add to soup. If desired, thin with milk or water. Additional ham may be added, if desired. Season to taste.
