Pinto: Western Beans

Western Beans
Country or Taste of Home magazines.

4 bacon strips, diced
1 large onion chopped
1/3 cup dry lentils1
1 -1/3 cup water
2 tablespoons ketchup
1 teaspoon garlic powder
3/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon dried red pepper flakes
1 bay leaf
1 can (16 ounces) whole tomatoes with liquid, chopped
1 can (15 ounces) pinto beans, drained
1 can (16 ounces) kidney beans, drained


Lightly fry bacon in heavy 3 quart sauce pan. Add onion; cook until transparent. Stir in remaining ingredients. Cook over medium heat for 45 minutes or until lentils are tender, stirring once or twice. Remove bay leaf before serving. Yield: 8-10 servings.
