Polenta Pie

1 pound sweet Italian sausage-casing removed
1 jar (26 ounce) tomato and basil spaghetti sauce
1 cylinder (24 ounce) basil garlic ready to heat polenta cut crosswise in 24 rounds.
Non stick cooking spray
1/4 cup grated Parmesan Cheese


Heat oven to 375 degrees and have a shallow 2 quart baking dish ready.

Brown sausage in a large skillet 4 to 5 minutes stirring often and breaking up clumps with a wooden spoon.

Stir in spaghetti sauce.

Add 1/4 cup water to sauce jar, cover, shake and pour into skillet.

Bring to a boil, reduce heat and simmer 5 minutes to develop flavors.

Pour into baking dish.

Cover completely with polenta, overlapping slices to fit.

Lightly coat polenta with cooking spray, sprinkle with cheese.

Bake uncovered, 30 minutes or until bubbly.

If desired, broil 1 to 2 minutes to lightly brown edges.

Serves 6.
