Poppy Seed Filling
1 lb poppy seeds
3/4 cup honey
1/2 cup heavy cream
1/2 cup sultanas
1/2 cup currants
1 tbls finely grated lemon rind
3 tbls walnuts, crushed
1 egg
1 apple, skinned cored and grated.
Wash poppy seeds, bring to the boil, strain and wash. Repeat twice. Place into liquidiser for a few minutes.
Transfer to saucepan and add honey, cream, currants, sultanas and apple. Cook over a low heat until thick. Remove from heat. Add lemon rind, walnuts and egg. Stir until well blended. Mince.
