Portuguese Pinto or Kidney Beans

PORTUGUESE PINTO OR KIDNEY BEANS

2 or 3 cups dry kidney or pinto beans
2 ham hocks OR 1 link linguisa OR 3 strips bacon, chopped fine
1 large onion, chopped fine
3 cloves garlic, chopped fine
2 cups tomato sauce
1/2 tsp. pepper
1/2 tsp. allspice
1 tsp. chile powder
salt to taste
1 Tbs. brown sugar

Cover beans with water and soak overnight. In the morning, change the water and boil beans and ham hocks (if using) until tender.

Saute onion and garlic with linguisa or bacon until onion is limp and transparent.

Add tomato sauce, spices, salt, and sugar to onion and simmer a few minutes.

Add to beans and cook until thick. Add more water if needed.
