BARLEY SALAD
DRESSING:
1/2 cup olive oil
1/2 cup fresh lemon juice
1/2 teaspoon freshly ground black pepper
Whisk all together and set aside.
SALAD:
4 cups cooked and cooled barley
2 cans(1-lb) red kidney beans, rinsed and drained
1 pound cherry tomatoes, quartered
1 cup snipped parsley
1/2 cup sliced green onions
Mix thouroghly and chill for several hours or overnight. When ready to serve pour dressing over salad and toss well.
