Salad Black Bean and Tomato

Black Bean & Tomato Salad

One (16 ounce) can black beans
2 tablespoons olive oil
2 or 3 fresh tomatoes chopped
1/2-cup fresh parsley chopped
4 to 5 cloves pressed garlic (or finely minced)
1/2 cup fresh lemon juice


Drain, rinse and heat black beans.

Add olive oil and bring to a slow simmer.

Remove from heat and add all ingredients except lemon juice.

Mix thoroughly and refrigerate for 2 hours.

Add lemon juice before serving.
