Cumin Bean Salad
1 (16 oz) can black eye peas
1 (16 oz) can pinto beans
1 (16 oz) can garbanzo beans
3/4 c balsamic vinegar
3/4 c olive oil
2 tsp ground cumin
1 clove garlic mashed
1 tsp sugar
salt and hot pepper sauce to taste
optional: finely chopped red onion
Drain and rinse beans; set aside.
In serving bowl, mix vinegar, oil, cumin, garlic, sugar and salt and pepper.
Add beans and toss gently.
Let marinate for a few hours.
Add onion if using
