Soup Bean by Jeannie

Source: Washington Redskins "Cooking with the Skins" cookbook

BEAN SOUP
1 ham bone
1 lb. navy beans
4-5 quarts water
1 sm. onion, diced
4 carrots, diced
1 tsp. salt
6 whole allspice
* 1 cup ketchup
3 potatoes, quartered
1 Tbs. parsley
1 tsp. pepper

In a large soup pot, combine all ingredients. Bring to a boil, lower heat and simmer for 2 hours. Season to taste. Add ketchup and simmer 1 hour more.

Serves: 8-10
