ABM Colombian Potato and Cheese

COLOMBIAN POTATO AND CHEESE BREAD

2-1/4 tsp. active dry yeast
3 cups bread flour
3/4 cup mashed potatoes
3/4 cup finely chopped onion
3 Tblsp. grated Parmesan cheese
1-1/2 Tblsp. chopped cilantro or parsley
1-1/2 tsp. ground cumin
1-1/2 tsp. ground oregano
1-1/2 tsp. salt
1/2 cup water
1/3 cup chopped and drained tomato

Add all ingredients except the tomato in the order suggested by your bread machine manual and process on the bread cycle according to manufacturer's directions.

At the beeper (or at the end of the first kneading in the Panasonic, National, and Sanyo), add the tomato.
