Dill Rolls for 1 pound Bread Machine
1/4 cup onions, finely chopped
1/2 stick (1/4 cup) butter
1/2 cup Ricotta cheese
1/4 cup warm water
1/4 cup sugar
1 egg
3 cups bread flour
1 Tbsp active dry yeast
1 Tbsp dried dill leaves
1 Tbsp vital wheat gluten*
In a 2 cup measure, cut the butter in slices and add the finely chopped onions, microwave for about 2 minutes until the mixture is hot and the onions are soft. Put a plate over the measure so you don't have a nasty mess in the microwave. Set aside to cool slightly.
Place the ricotta cheese, water, sugar, and egg in the container for the bread machine. Stir around with a fork, add the butter mixture and stir around so you don't scramble your egg. Add the flour, yeast, dill and gluten and choose your machines dough setting to make rolls, or use the regular bread setting for dill bread in the machine.
For rolls, remove and divide into 12 pieces, round and place onto a parchment covered sheet pan. Press down to flatten the tops and cover with Pam sprayed plastic wrap. Raise until doubled, about 1 hour, depending on the size of the room.
Bake in a 350º oven until lightly golden, when done immediately spread with butter and sprinkle with coarse Kosher salt.
These rolls freeze well, just refresh them in a toaster oven or your oven wrapped in foil.
