ABM Hot Cross Buns

HOT CROSS BUNS - Yields 12 buns

7oz. milk
2 T. butter
1 egg
1/4 cup sugar
1 tsp. salt
1 tsp. lemon or orange peel
3 cups all-purpose flour
1 1/2 tsp. rapid or quick yeast
ADD: 1/2 cup dried fruits of choice.

BREAD:
Preheat oven to 350.

Add all ingredients in order except dried fruit and process.

Add fruit to the machine pan after dough ball has been formed, about 5 or 8 minutes into the kneading phase.

Remove dough from machine upon completion of the dough cycle.

Divide dough into 12 equal pieces, shape into small balls and place in lightly greased muffin cups.

Cover and let rise for about 1 hour in a warm, draft-free location.

Just before baking, score a cross into the top of each bun with a sharp knife. Bake in preheated oven for 15-20 minutes.

GLAZE:
1/2 cup confectioners' sugar
1-2 T. milk
1/2 tsp. vanilla, almond, or orange extract

Mix all ingredients together in a small bowl. Adjust consistency with milk as desired. Set aside.

While buns are still warm, drizzle glaze into the cross on top of each bun.
