1 cup water
1 Tbl. sugar
1 Tbl. active dry yeast
3 cups bread flour
1 and 1/2 tsp. salt
2 Tbl. vegetable shortening or applesauce for lowfat
Put in order suggested for your bread machine. Dough should be smooth and satiny. Set machine to dough only stage.
After punch down, remove from machine and turn onto lightly floured surface. Form into 10 inch round loaf. Place on greased baking sheet. Cover loosely with plastic wrap, let rise until doubled - about 1 hour.
Preheat oven to 425F. Remove plastic wrap, bake in center of oven 10 minutes, then reduce heat to 375F, bake 25 minutes. Loaf is doen if it sounds hollow when tapped on bottom. Let cool before slicing.
