BAGELS (from the Rombauer-Becker version of Joy)

STEP ONE:
1 c. scalded milk
1/4 c. butter
1 T sugar
1t salt

STEP TWO:
When mix cools to 105*-115* add and dissolve 1 pck. yeast (2 1/4 t.) for 3 min.

STEP THREE:
Blend in
1-2 eggs
3 3/4 c. all purpose flour

STEP FOUR:
Knead this dough about 10 min., adding more flour if necessary to make it firm enough to handle. Let rise,covered, in a greased bowl until doubled .

Punch down and divide in 18 equal pieces and roll each piece into a rope about 7" long wet ends to seal and form ropes in doughnut-shaped rings.

STEP FIVE:
Preheat oven to 400.

Let rise, covered, on a floured board about 15 min.

Drop rings, one at a time, into a solution of 2 quarts boiling water 1 T. sugar.

As the bagels surface, turn them over and cook about 3 min. longer, skim out and place on an ungreased cookie sheet and coat w/ beaten egg white.

STEP SIX:
Bake for 20-25 min.
