BEER BATTERED ONION RINGS

3 lg. Vidalia onions (or other sweet white onion)
2 1/4 c. Flour
1/4 c. Cornmeal
2 ts. Baking powder
1 ts. Salt
1 can Beer
1 lg. Egg, beaten
Oil for frying

METHOD:
1. Peel onion, slice 1/2" thick & separate into rings.

2. Place in ice water for 30 minutes; remove & drain on paper towels.

3. Combine flour, cornmeal, baking powder & salt,stirring well; add beer & beaten egg. Stir until well blended. Chill batter 15 minutes.

4. Dip onion rings into batter, coating both sides.Fry a few at a time in deep fryer @ 375 degrees for about 5 minutes; should be browned & crispy. Drain well on paper towels. For thinner batter, use 1 1/2 c. of beer.
