Cinnamon-Raisin Biscuits
2 cups all-purpose flour
1 1/2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
3 tbsp. chilled stick margarine, cut into small pieces
1/2 cup raisins
3/4 cup 1% low-fat milk
1/2 cup sifted powdered sugar
1 tbsp. 1% low-fat milk
Preheat oven to 450 F.
Combine first 5 ingredients in a bowl; cut in margarine with a pastry
blender or 2 knives until mixture resembles coarse meal.
Add raisins; toss well. Add 3/4 cup milk; stir just until dry ingredients
are moist.
Turn dough out onto
a heavily floured surface; knead the dough 4 or 5 times.
Roll dough to a 1/2-inch thickness; cut with a 2-1/2-inch
biscuit cutter.
Place on a baking sheet. Bake at for 11 minutes
or until golden.
GLAZE:
Combine powdered sugar and 1 tbsp. milk; stir well. Drizzle over the biscuits.
Yields: 1 dozen biscuits (serving size - 1 biscuit)
