Cornmeal Biscuits
(from "Martha Stewart Living")
1 1/2 c. flour
1/4 c. + 2 T. yellow cornmeal
2 t. baking powder
3/4 t. baking soda
1 1/2 T. sugar
6 T. unsalted butter, chilled and cut into 1/2" pieces
3/4 c. plus 1 T. nonfat buttermilk
Heat oven to 400'.
In medium bowl whisk together flour, cornmeal, baking powder, baking
soda and sugar.
Cut butter into flour.(As you would a pie crust)
Stir in 3/4 c. buttermilk until the mixture holds together.
Roll to 1" thickness. Using a 2" round cutter or glass, cut into
8 biscuits.
Brush tops with the tablespoon of buttermilk and bake until golden and
fluffy about 12 minutes.
