Drop Biscuits

2 1/2 cups all purpose flour, divided
1/2 cup cake flour
l l/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
3 tablespoons shortening
1 2/3 cups buttermilk
l tablespoon melted butter (to brush on)


Arrange oven shelf slightly below center of oven. Heat oven to 475. Coat a 9-inch round cake pan with cooking spray.

Combine 1 1/2 cups flour, cake flour, baking powder, soda, salt and sugar.

Work shortening into flour until pea-sized.

Stir in buttermilk and let stand 2 or 3 minutes. Pour remaining cup of all-purpose flour onto a pie plate.

Spoon a biscuit sized lump of wet dough into flour and sprinkle some flour over wet dough to coat outside.

Shape it roughly into a soft round. Shake off excess flour. Place it in cake pan.

Push biscuits tightly against each other so that they will rise up and not out. Continue until all of dough is used.

Brush biscuits with butter and bake, 15 to 20 minutes.

Cool for 1 or 2 minutes in pan, them dump out and cut apart.
