Biscuits Sweet Potato

SWEET POTATO BISCUITS

2-1/2 cups BISQUICK baking mix
1/3 cup margarine or butter, softened
1 cup mashed, cooked sweet potatoes*
1/2 cup milk

Preheat oven to 450 degrees. Use a cookie sheet.

In a large bowl, mix all ingredients until a soft dough forms.

Turn dough onto a surface well dusted with baking mix; gently roll to coat. Shape into ball; knead 3 or 4 times.

Roll 1/2" thick. Cut with 2 inch cutter dipped in baking mix. Place with edges touching on cookie sheet.

Bake 10-12 minutes or until golden brown.

Makes about 1-1/2 dozen biscuits.

*NOTE: for 1 cup mashed cooked sweet potatoes, you can use about half of an 18 oz. can of vacuum-packed sweet potatoes. Make sure there is no syrup added.
