Biscuits: Teacakes

Teacakes (makes 8)

60g currants
30g mixed candied peel
140ml strong hot tea
about 140ml warm milk
15g fresh yeast
30g brown sugar
455g white bread flour
1 teaspoon salt
60g butter
milk for brushing


Soak currants and peel in the tea for 1 hour. In a bowl rub butter into flour and salt.

Drain currants, keeping the tea. Make up liquid to 280ml with the warm milk. Add liquid and sugar to the flour.

Knead for 10 minutes. Towards the end of kneading incorporate the raisins and peel.

Place in covered bowl and let rise till doubled.
Gently punch down, divide into 8. Shape into rolls, then press out to 5in rounds.

Prove, covered till doubled.

Preheat oven Gas 6.

Glaze with milk.

Bake 20 mins. Cover hot teacakes with a tea towel to keep soft.
