Yummy Yogurt Biscuits

2-1/4 cups all-purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1/4 cup cold butter, cut into small cubes
1-1/4 cups Balkan-style plain yogurt (not low fat)


Pre-heat oven to 425 degrees. Line a large baking sheet with baking paper.

In a large bowl, combine flour, baking powder, salt and baking soda with a fork. Cut in butter cubes with a pastry blender until mixture resembles coarse crumbs. Stir in yogurt, all at once to form a soft, sticky dough. Form into a ball.

Turn out onto lightly floured surface. Knead 8 times. Pat dough into 1/2 inch thickness with fingers. Using a 2" floured cutter, cut out biscuits and place on baking sheet. Re-press scraps and cut more biscuits. Bake for 12 minutes.

Makes about 15 biscuits.
