Avanti's Sweet Bread

1 pkg dry yeast
1 1/2 c. warm water
2 eggs, beaten
1 c. sugar
2 tsp. salt
6 to 7 cups flour


In a large bowl dissolve yeast in warm water. Add sugar and eggs and beat two minutes. Add salt. Add 1 cup of flour and beat well. Add remaining flour 1 cup at a time until you have a dough stiff enough for kneading. On floured surface knead 8 to 10 minutes.

Grease mixing bowl well and put ball of dough in and then turn dough over once to grease top. Cover and rise until double--about 1 hour.

Turn out onto floured surface and shape into 4 loaves. Place on 2 greased cookie sheets sprinkled with corn meal. Cover and let rise again for 45 minutes to an hour. Bake at 350 degrees for 30 to 35 minutes.

Note- It is important in baking this bread that the ingredients be at room temperature. You may make smaller roll type loaves for Italian sub sandwiches. Adjust baking time to accomodate this change.
You can bake this in 2 bread pans for larger loaves.
