Cardamom Coffee Bread

2 packages active dry yeast
1/2 c. warm water (105 degrees- 115 degrees)
1 t. sugar
1 12-ounce can evaporated milk (1 1/2 c.)
7 to 8 c. all purpose flour,divided
1/2 to 1 cup sugar ( as desired)
1 1/2 t. ground cardamom
4 eggs, room temperature
1/2 c. butter melted,divided
1 slightly beaten egg
2 tablespoons milk

In a large mixer bowl, dissolve yeast in warm water. Stir in 1 teaspoon sugar and let, stand for 5 minutes.

Heat milk to 105 degrees to 115 degrees. Add milk, half of the flour, 1/2 to 1 cup sugar, cardamom, 4 eggs, and 2 tablespoons of butter.

Beat with electric mixer until smooth. Beat in rest of the butter.

Stir in as much of the remaining flour as you can with a spoon. Cover: let rest for 15 minutes.

Turn out onto floured surface. Knead in remaining flour to make moderately stiff dough that’s smooth and elastic (about 10 minutes).

Place in a greased bowl: turn to grease surface. Cover and let rise in a warm place till doubled(1 to 1 1/2 hours. Punch dough down.

Preheat oven to 375.

Turn dough out onto a cutting board; divide into 3 equal portions. Divide each portion into 3 portions.

Shape each piece of dough into a 24 inch rope. Using 3 ropes each, shape into 3 braided loaves; tuck under ends. Place on lightly greased baking sheets.

Cover and let rise until doubled (about 1 hour).

Mix eggs and milk; brush over braids. Bake for 20 minutes or until golden.

Makes 3 loaves.
